HED 342: Nutrition for Athletic Performance

Jan. 16-March 9, 2018 (3 units, 8 weeks)   •   With Kathy Munoz

How food consumption and nutrition affect energy production and physical performance in sports activities. Analyze diet modifications, such as carbohydrate loading and use of ergogenic aids, to improve performance. Prerequisite: College-level basic human nutrition course.

HED 446: Optimal Bone & Muscle Development

March 19-May 11, 2018 (3 units, 8 weeks)   •   With Christine Dobrowolski

Explore the synergistic aspects of exercise and nutrition related to the development of strong bones and the maintenance, repair, and strength development of muscle. Prerequisite: College-level basic human nutrition course.

HED 344: Weight Control

SUMMER 2018 (3 units, 8 weeks)   •   With Kathy Munoz

Theories and practices to maintaining safe and healthy weight levels. Diet analysis, body composition and effects of exercise; behavior modification; surgery and pharmacology. Prerequisite: HED 231 (or equivalent).

KINS 447: Pharmacology & Ergogenic Aids

FALL 2018 (3 units, 8 weeks)   •   With Christine Dobrowolski

Effect of medication and nutrition on disease and sports performance. Effects of ergogenic aids on performance/health. Prerequisites: HED 231 (or equivalent nutrition course) and ZOOL 113 (or equivalent physiology course) are required.

Prerequisite

A college-level basic human nutrition course is the prerequisite for the four courses required to earn the certificate. Topics should include theories and practices examining the role of nutrition in health and exercise; and digestion, absorbtion and function of specific nutrients. HED 231 at HSU fulfills this requirement.

A college-level human physiology course is the prerequisite for KINS 447. ZOOL 113 at HSU fulfills this requirement.

Meet the Faculty

Kathy Munoz

Dr. Kathy D. Munoz is a professor emeritus of nutrition in Humboldt State University's Department of Kinesiology and Recreation Administration, and a registered dietitian through the American Dietetic Association. Over the past 30 years, Kathy has taught nutrition and health courses at Humboldt State University both using the traditional face-to-face delivery method and most recently, online asynchronous courses to meet the needs of students both on and off campus. Using online technology, Kathy has developed four courses offered for students to earn a Certificate in Exercise Nutrition. In addition, Kathy has developed and is teaching the first in a series of online courses that lead to a Certificate in Faculty Preparation aimed at preparing graduate students to teach in higher education, and to increase skills for professionals already in the teaching profession.

Christine Dobrowolski

Christine Dobrowolski completed her undergraduate degree in biochemistry at the University of California at Davis, earned a Master of Science in Human Nutrition from the University of Bridgeport and a Doctorate in Podiatric Medicine from Samuel Merritt University. She completed residency training in foot and ankle surgery at Western Medical Center in Anaheim and Kaiser Foundation Hospital in Walnut Creek. Dr. Dobrowolski practiced podiatric medicine for almost twenty years and recently retired.

Dr. Dobrowolski has been teaching nutrition at the College of the Redwoods since 2005 and courses for the Kinesiology and Recreation Administration Department and in the Exercise Nutrition Certificate Program at Humboldt State University since 2010. Her Optimal Bone and Muscle Development course at Humboldt State University was awarded the California State University Quality Online Learning and Teaching (CSU QOLT) award in 2014, and her Pharmacology & Ergogenic Aids course received the CSU QOLT award in 2015. Her introductory nutrition course at the College of the Redwoods continues to be the model course for the Redwoods Community College District.

Dr. Dobrowolski authored Those Aching Feet: Your Guide to the Diagnosis and Treatment of Common Foot Problems and co-authored a chapter in McGlamry's Textbook of Foot and Ankle Surgery. She manages a nutrition and health website called Nutritional Doublethink. Dr. Dobrowolski currently lives in South Lake Tahoe with her husband and her dog where she enjoys mountain biking, hiking, paddle boarding, and skiing.
